Super Curry?

Clinical trials are about to start on a medical form of the well know food additive Turmeric. A key ingredient of most Indian curry's, and also a health herb. Recent studies by the Salk Institute for Biological Studies in San Diego have confirmed that the spice can significantly slow or reverse the advance of Alzheimers disease.

The effective component (J147) has been extracted, and may well also help in the treatment of other diseases such as Parkinsons Disease, and Strokes. No doubt J147 will cost a fortune in a prescription form .... much like paracetamol costing the NHS £3.23 per item, despite paracetamol being sold for as little as 19p for a pack of 16 in supermarkets (a scandal if you ask me, and costs us £70 million a year).

Now frankly this is not really new information, as the BBC food page link has confirmed, and I would rather have a regular curry than a pill, but there you are. There are in fact a number of Super Foods, which allegedly provide different benefits .....

.... So I am sharing my Super-food Soup recipe below, which provides Anti-Cancer, Anti-Ageing, Anti-Oxident and High fibre benefits, and tastes great as well.

Super-food Soup

Makes enough for 6 helpings so adjust volumes as required.

Ingredients:
  • 2 tablespoons of Butter or Olive spread.
  • 2 Leeks - chopped.
  • 1 large Broccoli (as packaged in the supermarkets) - chopped into florets (discard stem).
  • 1 large or 2 small Onions - peeled and diced.
  • 1 large or 2 small Potatoes - peeled and diced.
  • 1 teaspoon ground Turmeric.
  • 1 teaspoon of Salt and a pinch of Black Pepper.
  • 1 tablespoon Sesame Oil or Olive Oil.
  • 2 Vegetable or Chicken Stock Cubes dissolved into one and a half measuring jugs of boiled water
  • You can add a few mushrooms as well if you want the extra ergothioneine and glutathione, antioxidants that some contain. The wild variety Porcini contains the highest amount but the white button has higher amounts than most other foods.  
Directions:

With vegetable preparation completed switch on Slow Cooker (high or low depending on cooking time scale required) and Pour Stock into slow cooker.
  1. Heat a large pan over medium/low heat, and melt the butter/olive spread.
  2. Add the leeks and onions and cook, stirring occasionally, until both are softened not browned.
  3. Add the softened Leeks and Onions into slow cooker. 
  4. Add Broccoli florets and diced Potatoes into slow cooker. 
  5. Add Turmeric, Salt, Black Pepper and Sesame Oil or Olive Oil.
  6. Cover and cook on high/low for 3-4 hours, until Broccoli and Potatoes are tender. 

My Super-food Soup Tastes Far Better Than It looks!

When cooked use an immersion blender, and blend until smooth to taste. Or decant into a blender and chop until smooth to taste. Add a swirl of cream to each serving if wanted, and serve with fresh bread/baguette and butter ..... enjoy a tasty and healthy meal.

NB: I believe that its freezable, but as I always eat it over a few days from a sealed tub in the fridge I cant confirm this ....

  1. Your soup looks and sounds great. As for the broccoli stems though, they're usually edible and very nice raw but if they are large and tough they can be peeled to reveal a delicious core - too good to be discarded!

    1. The recipe is flexible e.g. mushrooms, or no mushrooms. So if you like the Broccoli stem, then add away. Immersion blenders can't hack through that baby though.

  2. Tried it. GREAT but made a lot. Try halving the amounts. But otherwise a really nice recipe. Thanks.
